Spicy herb-rubbed roast beef

This is a generic paprika based rub I use on various beef roasts. Just finished a dinner with friends serving a prime rib roast with this rub and even theirs and my youngest both enjoyed it.

  • 1½ tablespoons paprika
  • 1 tablespoon ground sea salt
  • 1 teaspoon garlic powder
  • 1  teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon ground cayenne pepper (too much will add heat without flavor)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

The meat: follow the directions for a normal roast but prepare the rub an hour before hand and rub the meat and let stand on the counter to bring the meat to above fridge temperature. For the 4½lb rib roast it took 2 hours at 350°F (medium-rare internal temperature 135°F – take out of the oven at 130°F and let it stand for 15 minutes to rise another 5°F).
